Understand the types of vinegar
There are three main vinegars you can work with: cider, distilled (also called white), and wine. Each of these has a different source and corresponding flavor and “bite,” or acidity.
- Cider vinegars are made from fermented apples. Not surprisingly, it has a fruity flavor and a noticeable bite. Raw, unfiltered cider vinegar is the optimum grade of this variety.
- Distilled (or white) vinegar is made from fermented grain. It’s clear with a rather acid flavor, and is only used with other ingredients. (You wouldn’t pour it straight on a salad.)
- Wine vinegars are, of course, made from fermented grapes, and their qualities vary on the type of grape used.

Brew Your Own Beer (continued)
Gather your supplies
Many home brew stores sell all-inclusive startup kits, or you can improvise much of the necessary equipment by using household items you already own. Here’s a rundown of what you need:
A brew pot. Use a stainless-steel or enamel-coated metal pot with a lid and at least a 4-gallon (15-liter) capacity.
A brew spoon. Use a stainless steel or plastic spoon with a handle that’s at least 18 inches (45 centimeters) long.
A fermentation vessel with airlock. This is a 7-gallon (26-liter) plastic bucket with a spigot and an airlock (this “fermentation lock” is crucial, as it allows carbon dioxide bubbles to escape during fermentation). You’ll most likely have to buy one from a home brew specialty store.
Bottles. For this recipe, you’ll need 54 twelve-ounce (355-milliliter) bottles. Either buy them new from your home brew supplier, find a local recycling bin and pick them up for free, or buy nine six-packs and empty out the beer (if you decide to drink the contents, please don’t do it all at once!). Appreciate Beer
Take one down and pass it around . . .
It’s O.K. to be a little suspicious. After all, good beer looks, smells and tastes a lot different than that case of “light” beer you just bought. Just be warned–as you start to like the good stuff, the realization that you’ve been buying weak, tasteless, cheaply produced swill for so long can be pretty painful. Quality also comes at a higher price. Bargaining with liquor store owners won’t get you anywhere, though–case discounts rarely apply to microbrewed six-packs. So try not to get too depressed, the best things in life always seem to cost more, and drinking quality instead of quantity is a decent trade-off. Once you’ve finally accepted that you can’t stomach cheap beer anymore, you’ll be all right–you’ve opened the path towards a whole new range of conversation with that attractive stranger at the bar.
