Ingredients for 4 people:

12 coquilles Saint-Jacques 1 small glass of Madeira 1 dl olive oil 1 lemon 60 g butter C 1 tablespoon capers C 2 tablespoons herbs (parsley chives chervil) salt pepper paprika.

Preparation:

To open the shells to four seasons.

Prepare marinade: In a baking pan, put the Madeira, the same quantity of oil, lemon juice, paprika, salt, pepper.

Put the shells. Marinate 3 hours, turning


occasionally.

In a saucepan heat a knob of butter and 1 c tablespoons of oil.
